  • 50ml Tarsier Southeast Asian Dry Gin
  • 25ml lime juice
  • 20ml lemongrass syrup
  • 75ml prosecco
  • 25ml soda

Add gin, lime juice and syrup to a wine glass with ice. Stir then add prosecco and top with soda. Garnish with a lime wheel and a sprig of basil.

  • 15ml elderflower cordial
  • 15ml lychee juice
  • 10ml lime juice

Add all ingredients to a cocktail shaker with ice. Shake and double strain into a chilled coupe glass. Garnish with a lychee on a skewer.

  • Top with lemonade

Add all ingredients to a tall collins glass full of ice. Stir and top with lemonade. Garnish with raspberries and a sprig of mint.

  • 15ml lychee juice
  • Top with prosecco

Add gin and lychee juice to a chilled champagne flute. Top up with prosecco and garnish with lychee.

  • 2 slices fresh chilli (no seeds)

Add all ingredients to a cocktail shaker with ice. Shake and strain into a rocks glass rimmed with chilli salt and full of crushed ice.

A spicy, umami Thai take on a classic

  • 50ml Tarsier Chilli & Lemongrass Gin
  • 20ml lemon juice
  • 1/2 bar spoon soy sauce
  • 1/2 bar spoon tom yum paste
  • 120ml tomato juice

Add all ingredients to a tall glass rimmed with chilli powder. Add ice. Stir until chilled. Garnish with a celery stick and fresh chilli.

  • 50ml Tarsier Calamansi Citrus Gin
  • 10ml honey
  • 15ml lemon juice
  • Top with soda

Add all ingredients to a tall collins glass and stir until honey is dissolved. Add ice and top with soda. Garnish with a lemon wheel. 

CALAMANSI CITRUS GIN

CEBU SUNSET SOUR

A citrusy, silky sour

  • 50ml Tarsier Calamansi Citrus Gin
  • 25ml calamansi or lemon juice
  • 20ml simple syrup
  • 4 drops foamer or 15ml aquafaba (optional)

Add all ingredients to a cocktail shaker with ice. Shake and double strain into a chilled coupe glass. Garnish with a slice of orange.

CALAMANSI CITRUS GIN

EMEI PEACH SOUR

Delicate, floral, silky

  • 50ml Tarsier Oolong Tea Old Tom Gin
  • 20ml lemon juice
  • 10ml simple syrup (2:1)
  • 1 tbsp peach flesh
  • 1 egg white

Add all ingredients into a cocktail shaker with lots of ice. Shake until well chilled. Double strain into a chilled martini glass. Garnish with an orange zest twisted on side of glass 

OOLONG TEA OLD TOM GIN

TAIPEI ICED TEA

Crisp, zesty, refreshing

  • 50ml Tarsier Oolong Tea Old Tom Gin
  • 20ml lemon juice
  • 15ml simple syrup (2:1)
  • Top up with soda water 

Add ingredients except soda into a cocktail shaker with ice. Shake until well chilled. Strain into long tall glass with lots of ice, top with soda and garnish with a lemon wheel

OOLONG TEA OLD TOM GIN

A silky-citrus modern martini

  • 50ml Tarsier Yuzu Marmalade Vodka
  • 15ml lemon juice
  • 15ml orange liqueur
  • 1 bar spoon marmalade or citron tea

Add all ingredients to a cocktail shaker. Shake until well chilled. Double strain into a chilled martini glass and garnish with a ribbon of lemon peel.
